Cockles:
Blanched blood cockles, roasted corn, clam emulsion, wild garlic oil, clam air
Chef's signature Ceaser salad:
roasted baby gem, pork lard, anchovies panko, and Ceasar foam dressing.
Beef carpaccio:
Beef carpaccio, 12 years aged balsamico, parmesan and truffle cream, fried capers, fermented mushroom.
Tortelli:
Hand made lamb and ricotta tortelli in chicken consommé
Quail:
This is an aged and glazed Quail, roasted breast, confit leg, jus, and roasted baby carrots
Pannacotta:
Sakura Pannacota, rhubarb jelly.
